Rule of thumb: a fridge drops a bottle roughly 1°C every 10 minutes. In a hurry, 15 minutes in the freezer does about the same as an hour in the fridge — set a timer.
Two Mistakes That Ruin Good Wine
Serving reds too warm. "Room temperature" advice dates from unheated European cellars. A modern 22°C living room makes even great reds taste alcoholic and flat — nearly every red improves with 20–30 minutes in the fridge.
Serving whites too cold. Straight from a 4°C fridge, a rich white is practically anesthetized. Give an oaked Chardonnay 15–20 minutes on the counter and its aromas come back to life.
